Cate Conway runs the Dancing Ember Bakery. The dancing flames and embers inside of a wood fired oven inspired the name, "Dancing Ember Bakery." Cate has been baking for ten years, five years baking in the bakery, and five years baking at home. Cate tries to use mostly all organic products to make her foods. She uses local organic foods like, wheat, milk, eggs, butter, honey, maple syrup, and frozen fruits. She uses honey, maple syrup, and sucanat as her sweeteners. Cate has been living in Bar Harbor baking at a bakery, but then she moved to Skowhegan and continued to bake for family, friends, and the farmers' market. She bakes her foods on Friday for sale every Saturday.

Why Cate uses whole grains: Unrefined, whole grain flours provide fiber and nutrients that are lost when the germ and bran of the grain is removed to make white flour. The flavor of Cate's products are enhanced by the full, nutty taste of the whole wheat.

Breads: cardamon, raisin,cinnamon swirl, oatmeal, pita breads, pizza, whole grain wheat bread, sticky buns, oatmeal loafs, foccia

Other treats: biscotti, brownies, and fruit bars.
